Whoopie!!!

I had my first Whoopie Pie about a month ago when Stephen and I went out of town one day. Ironically it was from a gas station, but nonetheless I fell in love. I have yet to find a Whoopie Pie that is as tasty as the one I had that day, so naturally that gave me a reason to bake. I have people coming over tonight so I searched for a recipe and found two that seemed appealing; chocolate whoopies and oatmeal whoopies.

I am not real impressed with the chocolate. The chocolate flavor isn't as intense as it should be, nor as sweet as I think it should be. So I'll either modify the recipe using dark chocolate cocoa powder next time or scrap that recipe altogether and find a new one.

The oatmeal whoopies are pretty tasty; I haven't decided if they need modifying or not. They remind me of the oatmeal cream pies.

All in all, it was a great time of baking, experimenting and hoping that even though these didn't come out quite as decadent as I had hoped, they will still be enjoyed by my friends and neighbor.
